Cute Christmas Cake

I really enjoyed making this cake. If you have never heard of these cakes they are called deco rolls. You can google it on images and see all of the different ideas and designs. They are limitless. With this recipe you can get creative and really do any design you would like and with Christmas around the corner I really felt like making a deco roll for the holidays. I found a pretty christmas tree online and just took a screen picture on it and made my own deco roll template. The one I used is from http://www.printabledecor.net/2011/set-of-three-christmas-printables/

 

The first thing you have to do is make the batter for your template. It is pretty easy and fast. All you need is 1 egg white, 2 table spoons of sugar, 3 tablespoons flour and 2 tablespoons butter. Mix the ingredients very well and just add any food coloring you’d like to give it color.

Transfer the batter to a piping bag with a small tip. Now it’s time to use your drawing skills and start tracing your design. After you are done leave it in the freezer for about 2o mins.

For the cake batter, you’ll need 4 eggs, 4 tablespoons of butter, 3/4 cup flour, 2/4 cups of sugar and 1 tsp vanilla extract. Preheat the oven to 375F.

Melt the butter and separate the egg whites and the yolk in two different containers.

Add half of the sugar to the whites and the other half to the yolks. whip the egg whites and sugar until you have firm peaks.

Then whip the yolks and sugar until smooth and pale.

Some people add 1 tsp cream of tartar to the egg whites to increase the volume. I skip this step because I didn’t have it on hand but will definitely try to use it for next time.

Fold the whites into the yolks in batches. Don’t stir the batter because it will loose all the fluffiness.

When egg yolks and whites are incorporated add the butter, flour and tsp of vanilla. Be careful to not over mix the batter.

Add the batter to the frozen design and tap the baking sheet to loose bubbles and even out the batter on the tray.

Bake the cake for only 7 mins. Right when it comes out of the oven cut the edges of the cake with a knife put a piece of parchment paper on top and use a flat baking tray or cutting table to flip it over. Do not over cook it or it can dry and break.

Right away peel off the parchment paper very gently from the design while it is still hot.

Flip the cake over again, use the parchment paper you took off to put it back on (this time it is not sticking to the cake) and roll it to keep it in shape.
Christmas cake 24Lastly, spread your favorite frosting and roll the cake. Serve in a pretty tray and done!

And you’ll end up with a pretty cake! I made this last weekend for a Christmas party and people really liked it.Christmas Cake

 

INGREDIENTS

For the Design:
1 egg white
2 tablespoons sugar
3 tablespoons flour
2 tablespoons soft butter
1 tsp cream of tartar
For the cake batter:
4 eggs
4 tablespoons of butter (melted)
3/4 cup flour
2/4 cups of sugar
1 tsp vanilla extract
INSTRUCTIONS:

Separate the egg whites from egg yolks in two different mixing bowls.

Add half the sugar and the cream of tartar to the whites and the other half of the sugar to the yolks.

Blend the whites until firm peaks.

Blend the yolks and sugar until pale.

Fold whites into yolks in 3 batches.

Add half the butter and half the flour and keep folding the batter. Add the rest of the butter and the flour and fold until all ingredients are combined.

Pour the mixture over the baking dish with the frozen pattern and spread evenly.

Bake for only 7 minutes.

As soon as it comes out of the oven take the cake out of the tray and carefully take the parchment paper out while it is still hot.

Put the parchment paper back on and roll the cake just to give it shape. Leave it like that for a few minutes.

Lastly, unroll and spread your favorite frosting.
