AUTUMN PEAR SALAD WITH CANDIED PECANS

Enjoy this delicious salad as a side or as a main course meal. It’s a favorite in my house, especially during Fall when pears are in season.  The ingredients for this salad make the perfect combination of flavors in your mouth– from the goat cheese, to the lettuce, chicken, crunchy candied pecans, and the sweet pears.  You can definitely say it “pears” well together. 🙂

The total price I payed for this recipe was $16.53 as a main dish salad for 4 people. That comes out to $4.13 per serving! Since I like to make my life as easy as possible, I buy ingredients that are ready to use like pre-washed lettuce, pre-crumbled goat cheese, and chicken from Trader Joe’s that is already packaged individually.  It’s not always the cheapest option, but when in a rush, this is how I do it.

I’m sure you can make this recipe a lot more affordable by washing your own lettuce, or buying bulk goat cheese and chicken at Costco or other discount grocery stores.

Autumn Pear Salad with Candied Pecans

Ingredients

SALAD

  • 5 ounces mixed baby lettuce $ 2.49
  • 1/2 cup candied pecans $ 1.40
  • 4 ounces crumbled goat cheese $ 2.49
  • 2 pears (bartlett are my favorite) $ 1.78

DRESSING

  • 1/4 cup extra virgin olive oil $ .63
  • 2 tbsp white modena vinegar $ .60
  • 1 tbsp dijon mustard $.15
  • 1 tbsp honey $ .22
  • 1/4 tsp black pepper $ .05
  • 1 minced shallot (optional) $ .25

CHICKEN

  • 2 boneless skinless chicken breasts (cooked, in cubes) $ 6
  • salt and pepper to taste $.05
  • 1 tbsp cooking oil $.16

Instructions

CHICKEN

  1. For the chicken, I like to cut it in cubes, season with salt and pepper to taste, put in on a skillet over medium high heat with 1 tablespoon of oil until fully cooked. You could also grill it and cube it.

DRESSING

  1. Place all dressing ingredients in a jar, cover, and shake well. 

SALAD

  1. Chop the pecans.

  2. Place a bed of lettuce in a salad bowl, top with remaining salad ingredients, drizzle with a little bit of the dressing and enjoy.
